Under 15 Minute Meal
Low Carb Taco Salad
1 beef patty
1 tbsp olive oil
Seasonings (I used Sriracha & Lime Seasoning and 21 Seasoning from Trader Joe’s)
1 stalk green onion
1/4 cup Fusion Blend vegetables (corn, edamame and black beans – from Costco)
Cook lean beef patty in 1 tbsp olive oil on the stove top (takes about 5-6 minutes.) Sprinkle both seasonings on top and set aside.
Cut up desired amount of lettuce and green onion. Place in a bowl. Microwave vegetable blend (I use the corn, edamame & black bean mix because it has more protein) for 45 seconds with 1 tbsp water; drain the water after. Pour veggie blend on top of lettuce. Slice up avocado and throw that on top too. Beef should be cooled, pour on top of salad and add hot sauce if you like it spicy. Enjoy!
