Sweet Potato Salad
For one single serving portion:
1 sweet potato
1/4 red onion
2 tbsp olive oil
Garlic powder
Feta
Preheat oven to 400. Rinse the sweet potato but leave the skin on (it bakes nice and crispy.) Chop up the sweet potato and red onion into small, bite-sized pieces. Pour 2 tbsp olive oil into a glass cooking pan. Toss sweet potato & red onion in olive oil. “Sprinkle” (I pour loads of garlic on mine) garlic powder on top. **Garlic is highly nutritious but has few calories. It helps regulate blood sugar levels, clears your skin, fights off the common cold and has been proven to prevent cancer – also I think it tastes delicious.
Let cook for 40 minutes. Remove from the oven once the sweet potatoes are soft, and let cool. Place in a fresh bowl and pour desired amount of feta on top (I usually do about 2 tbsp.)
Also this stuff keeps pretty well, you could make a double portion and save half for lunch the next day! Would be perfect with a chicken breast.
