Protein Peanut Butter Cups, only 4 ingredients! Aka heaven on earth..
Natural peanut butter
Plant-based vanilla protein powder
Line a mini muffin tray with cupcake liners. Mix 1/4 cup natural peanut butter with 2 tbsp of vanilla protein powder in a bowl.
Melt 1 cup of dark chocolate with 1 heaping tbsp of coconut oil in the microwave, stirring every 30 seconds (should take about a minute.) Pour 1 tsp of chocolate coconut mixture in the bottom of the muffin trays. Place in the freezer for 10-15 minutes until it hardens.
Take out of the freezer and plop 1 tsp of the peanut butter/protein powder mix on top. Gently flatten with your finger tips. Pour 2 tbsp of chocolate mixture on top until peanut butter is fully covered.
Place muffin tins in the freezer for another 15 minutes until hardened. Enjoy! (Keep in the fridge in the meantime so they don’t melt – honestly though mine never last long enough in my household to do so haha)
