Ingredients:
Coconut oil
Onion
Celery
Carrots
Parsnips
Broccoli
Cauliflower
Garlic powder
Salt + pepper
Vegetable broth
Coconut milk
Hot sauce
Melt 2-3 tbsp of coconut oil in a big pot on the stove top. Chop up all the veggies into medium sized pieces. Cook them on the stove top for about 15 minutes until they’re soft (but not mushy!) Add garlic powder, salt and pepper.
Boil 4 cups of water in a kettle. Pour this into a big mixing bowl and add 3 tsp veggie soup broth powder. Add 1/4 cup coconut milk and 5 dashes of hot sauce. Stir well.
Pour the broth into the cooked veggies on the stove top. Use a big ladle and scoop out about 1/3 of the mixture into a food processor or blender WITH enough broth that it will mix. Blend until smooth & add back into the soup. This will make the soup way creamier and thicker. Mix everything for 2 minutes and enjoy😋
***This soup is amazing if you have stomach issues like me. It’s honestly SO good on sensitive tummies (maybe skip the hot sauce though) and helps your digestion get back on track.
Alternative version: I make this soup weekly so to change it up some days I do mostly all cauliflower & broccoli and skip the other veggies to make a roasted cauliflower soup. This is lower in carbs as well.
