Slow Cooker Chick Pea + Lentil Curry

Yummy chick pea, lentil and chicken curry. Delicious, healthy dinner and perfect for leftovers to take to work for lunch😋🍽

Can be made vegan, just don’t add the chicken and opt for veggie broth instead of chicken! Dairy-free & gluten-free for sensitive tummies like mine☺️

Ingredients:

2 cans of chicken (I buy mine from Costco) – drained

1 can of chick peas – drained

1 can of red lentils – drained

3/4 cup of cauliflower rice (Costco)

3 cups chicken (or vegetable) soup broth

1/2 red onion; chopped

5 garlic cloves; minced

1 tsp ginger

1 tsp tumeric

1 tbsp curry powder

Salt + black pepper to taste

2/3 cup of coconut milk

Honestly this is such an easy meal to prepare in the morning before going to work and then coming home and a healthy dinner is already made for ya!

Just put all the ingredients EXCEPT the coconut milk in your crock pot for 5 hours, stir everything well before leaving it so that all the spices and flavours get mixed in. Stir in the coconut milk once ready and cook for another 15 minutes. Serve over steamed rice, quinoa or just by itself! (If I wasn’t gluten-free I’d get some garlic naan bread up in here🙋🏼)
